    Hi, I’d like to specify/change the reply email when sending out the schedule. At the moment, replies automatically go to the church administrator, but I’d like any email replies to go to a different person.

    I’ve found this option:
    “Use your own smtp server settings for sending email from the website (Click to reveal)
    Leave blank and save to delete current settings
    Using these settings changes the way WordPress sends email across your whole site, to using your smtp server”

    However, I do not want to change anything else within WordPress-sent emails, just the scheduling email.

    That setting is for when you want to use a different mail server to send the emails.
    In v1.1700 I’ve added in changeable from name/email on the message itself.
